- 1 red bell pepper (or 1/2 red and 1/2 orange for more color)
- 1/2 jalapeno pepper (with seeds removed)
- 1 avocado
- 0.75-1.00 pound of raw white fish (mahi, opah, etc.) or shrimp
- 1/2 medium size red onion
- salt/black pepper
- limes (1-2) and/or lime juice
- Tostitos Scoops (for serving)
- If using shrimp, blanch for 1 min, then rinse under cold water, and drain
- Cut the meat into small cubes, ~1/3", place in bowl and add some lime juice and pepper
- Dice the onion and add to bowl
- Let meat "cook" until opaque (~1hr for fish, ~1hr30 for shrimp), stirring occasionally
- Meanwhile, dice red pepper and cut avocado into small cubes.
- When the fish is "cooked", add bell pepper and avocado, mix and drain excess lime juice.
