- 1 cup (uncooked) brown rice
- 1 tbsp. olive oil
- 1 yellow onion, finely chopped
- 1 1/2 cup mushrooms
- 1 1/2 cup cubed chicken breast/thighs
- salt
- black pepper
- 1 1/2 cups broccoli
- 1 1/2 cups milk
- sharp cheddar, shredded
- 3 tablespoons all-purpose flour

Cook rice according to directions.

While rice cooks, saute onion, mushrooms, and chicken in olive oil.

Steam broccoli in microwave. (Microwave in tupperware for ~3 mins with a splash of water.)

In a small bowl, combine milk and flour, whisk until smooth.

Add mixture to skillet and cook 2 minutes or until bubbly and thick, stirring frequently.

Add cooked rice and broccoli to skillet. Add salt and pepper to taste, then stir.

Sprinkle with cheese and cook until cheese melts, ~1 minute.
