BLACK BEAN BOIGAS

Ingredients

  • Panko, ~1c
  • Flour, ~1/4c
  • Black Beans, 2 cans
  • Red Onion, 1 medium
  • Egg, 1 large
  • Fresh Crushed Garlic, ~1t
  • Cumin, ~1T
  • Secret Aardvark Sauce, 1 shitload
  • Salt, 1/4t
  • Toppings (Avocado, Bacon, Provolone, Red Pepper, Mayo, Onion Straws, Ketchup, Aardvark Sauce, Sour Cream, WHATEVA)
  • Cooking Oil

Preparation

Before you start, begin heating a pan to medium-high heat. Why wait later?

Make the base:

  1. Cut the red onion in half
  2. Put the one half of the red onion in a food processor
  3. Drain one can of drained black beans and put those in the food processor
  4. Put the egg in the food processor
  5. Blend it all up

Your pan is probably ready now

  1. Spray the pan with high-heat cooking oil (if you don't have spray, just spread it real thin)
  2. Toast that fuckin' panko
  3. Put the toasted panko in a bowl

If you're making the ULTRA-DELICIOUS VERSION (not vegetarian, less healthy too), start cooking some bacon in a pan now while you do other stuff. When it's time to fry the boigas, you'll fry them in the bacon grease. You'll need a good pool of oil, so you'll need to make a lot of bacon if you want to do this.

If you're making the vegetarian version, add a healthy layer (1/8-1/4 inch thick) of cooking oil to the pan.

Next, make the burger pattie mix:

  1. Finely dice the remaining half of the onion
  2. Add the diced onion to the panko in the bowl
  3. Add the other can of black beans, drained, to the bowl
  4. Add the garlic/cumin/salt/whatever spices to the bowl
  5. Add the blended base to the bowl, and STIR
  6. Add the flour to the bowl to thicken. If it's really runny, you can add more, but DO NOT ADD TOO MUCH OR THEY'LL BE GROSS PANCAKES
  7. Squirt a fuckload of aardvark sauce into that shit.

Form into patties, and drop into the now-hot oil. It should be nice and crispy and dark, but it's super gross if you burn it so keep an eye on it. Flip when done. It takes 3-5 minutes per side. Don't make them too thick or they won't cook through. About the size of a diner burger is good.

Drain on paper towels, then put on buns and add topings. Bacon, avocado, sour cream, aardvark sauce, and red peppers are my favorite toppings. Experiment.
